Ingredients

  • 5-6 c. cauliflower florets - about 1 & 1/2 inch diameter
  • 1/4 c. extra-virgin olive oil
  • 1 T sliced garlic
  • 2 T lemon juice
  • 1 t salt
  • 1/2 t. black pepper
  • 2 T grated parmesean
  • chopped chives

Preparation

Step 1

preheat to 500 degrees
place cauliflower in a roasting pan
drizzle with olive oil
season with garlic, lemon juice, salt and pepper
roast for 15 minutes, stirring occasionally
remove from the oven and sprinkle with parmesan
garnish with chives
