FRESH Tomato Basil Sauce

Ingredients

  • 6 Roma Tomatoes
  • 2-3 cloves fresh garlic
  • 5-6 fresh basil leaves
  • 1/4 cup Olive Oil
  • 1 lb. Angel Hair Pasta
  • salt and pepper to taste

Preparation

Step 1

1. Take a knife and cut just through the skin on the bottom of all the tomatoes. Making an X.

2. Drop the tomatoes in a pot of boiling water for 3-5 minutes...just until the skin begins to peel away from the X. Let tomatoes cool enough to handle and peel the skin.

3. Coarsely chop the tomatoes or use kitchen scissors to chunk them up nicely. Place in a bowl and press the 2-3 cloves of garlic (more if you like) into the bowl through a garlic press.

4. Stack the basil leaves and chop into strips. Add chopped basil, olive oil, salt and pepper to taste and mix well. Let sauce sit at room temp for at least 30 minutes.

5. Boil pasta until done to your liking. Do NOT drain.

6. Using tongs or pasta fork, place pasta from water directly into the bowl with the tomatoes. Mix well and serve with Italian bread and grated cheese.
