Tropical Chicken Salad 1 Picture

Ingredients

  • For dressing:
  • 4 cups spinach
  • 2 chicken breasts (boneless)
  • 1/2 cup fresh pineapple, sliced into 1" rings
  • 1 avocado
  • 1/3 cup red onion
  • 1/4 cup feta cheese
  • 1 clove garlic, or to taste
  • 1/3 cup olive oil
  • 1/2 cup apple cider vinegar (I like to add more for a stronger taste)
  • 1 tsp honey
  • Salt and pepper, to taste

Preparation

Step 1

- Turn outdoor grill on medium heat (you can also use your stove or indoor grill).
- Brush chicken with olive oil and add salt and pepper.
- Add chicken to grill and cook 5 minutes per side.
- Add pineapple and cook 5 minutes per side until golden
- Let pineapple and chicken cool, then cut both into chunks.
- Add remaining ingredients to bowl and toss.
- Add dressing just before serving.

Tip: Save time by buying an pre-cut and cored pineapple. You can now find these at most grocery stores!
