Ingredients
- Brine:
- 4 slices onion
- 4 heads of dill
- yellow or green beans (carrots)
- 2 1/2 cups water
- 2 1/2 cups vinegar
- 1/4 cup canning salt
- 1/8 cup sugar

Step 1
In each jar put 1 slice onion on bottom and 1 head of dill. pack with beans (carrots)Heat brine until boiling and pour over the beans (carrots). Seal and process in a water bath 10 minutes. Hint: Add some jalapeno pepper or garlic for another taste.
can substitute 2 tsp dill week for dill, not as good but doable. we put 2 slices of jalapenos ,1/2 tsp garlic along wtih onion on bottom
About 10 pounds of carrots to 4 times the brine gets you about 8 quart jars
