ULTIMATE PEACH PIE

Got this from Canadian Living - August 2014.. made it right away and thrilled with the results.

Ingredients

  • 6 cups sliced pitted peaches
  • 3/4 cup white sugar
  • 1/4 cup flour
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 1 egg yolk
  • 2 tsp coarse sugar

Preparation

Step 1

Mix peaches, sugar, flour, lemon juice and vanilla. Pour into unbaked pie shell. Top pie shell with "circles" of pastry starting on outside edges and working in.

Whisk egg yolkd and 2 tsp water. Brush over circles and rim. Sprinkle with coarse sugar.

Put on a cookie sheet (VERY IMPORTANT)and bake at 425 for 20 minutes on the BOTTOM rack. Then reduce heat to 350 degrees for 60-70 minutes. Let cook on rack.
