Bundt Cake

Ingredients

  • 1 Tbsp dry breadcrumbs
  • 1 1/2 c granulated sugar
  • 1/4 c butter, softned
  • 2 large eggs
  • 1 large egg white
  • 1 1/4 c fat free sour cream
  • 1 tsp vanilla
  • 2 1/2 c cake flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 c flour
  • 3/4 c packed brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 Tbsp butter, chilled and cut into small pieces
  • 1/4 c chopped pecans
  • 1 tsp powdered sugar

Preparation

Step 1

1. Preheat oven to 350 degrees
2. Coat 12-cup Bundt pan with cooking spray, dust with breadcrumbs
3. Place sugar and 1/4c butter in a large bowl, beat with mixer at medium speed until well blended. Add eggs and egg white, one at a time, beating well after each addition. Beat in sour cream and vanilla
4. Combine cake flour and next 3 ingredients, stirring with a whisk. Add to butter mixture, beating at low speen until blended.
5. Combine flour, brown sugar, cinnamon, and 1/4 tsp salt; cut in 1 Tbsp butter until resembles course meal. Stir in pecans.
6. Pour half batter into pan. Sprinkle with pecan mixture. Pour in remaining batter. Bake at 350 degrees for 40 minutes or until wooden pick inserted in center comes out clean. Cool completely on wire rack. Invert onto platter. Sprinkle with powdered sugar.
