Artichoke Caponata

Ingredients

  • 2 T olive oil
  • 1/4 C finely chopped shallots, 2-3
  • 3 clove garlic, peeled, minced
  • 3 ribs celery, diced, 4
  • 2 medium carrots, peeled, finely chopped
  • 1/2 C chopped green olives
  • 2 T chopped capers
  • 1 can (14 oz) quartered artichoke hears
  • 2 T white balsamic vinegar
  • 2 T honey
  • zest and juice of 1/2 lemon
  • 2 T chopped fresh oregano
  • Salt
  • Ground black pepper

Preparation

Step 1

1. In a large skillet over medium-high, heat the olive oil.

2. Add the shallots, garlic and onion.

3. Saute til tender and beginning to brown, 6-8 minutes.

4. Add the celery and carrots for another 6-8 minutes.

5. Add the olives, capers, artichokes, vinegar, honey lemon zest and juice and oregano.

6. Lower the hear to medium and cook for another 5 minutes, stirring gently.

7. Season with salt and pepper.

8. Serve warm or at room temperature.
