Green Chicken Curry

Ingredients

  • 3-4 lbs of boneless, skinless chicken (breasts, thighs, or combo), chopped
  • 2 T. butter
  • 4 cloves of garlic, minced
  • 2 T. fresh grated ginger
  • 1 1/2 t. tumeric
  • 2 T. lemongrass (or 1 T. of paste)
  • 1 T. curry powder
  • 2 t. cumin
  • 1 T. fresh chopped tarragon (or 2 t. dried)
  • 1-3 t. chili flakes (depending on how hot you want it)
  • 2 T. fresh cilantro leaves, chopped
  • 1 bunch of green onion, chopped
  • 2 large carrots, sliced
  • sea salt and pepper to taste
  • 6 oz of coconut milk
  • 1 T. matcha powder

Preparation

Step 1

Put all ingredients except the coconut milk and matcha powder in a crockpot and cook on low for 5-6 hours. Then stir in rest of the ingredients and cook until thickened (about 15 minutes). Curry sauce should be slightly thin but if you prefer it thicker, add some thickener to your preference.
