Ingredients

  • 4 eggs
  • 1 2/3 cup sugar
  • 1 cup vegetable oil
  • 1 15-ounce can pumpkin
  • 2 cups flour
  • 2 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ICING
  • 8 ounce package cream cheese
  • 1 1/2 cup butter
  • 2 cup powdered sugar
  • 1 teaspoon vanilla extract

Step 1

Using an electric mixer, combine the eggs, sugar, oil and pumpkin until fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add dry ingredients to pumpkin mixture and mix until smooth. Spread batter into a greased 13x10 inch baking pan. Bake for 30 minutes. Let cook then ice and cut into bars.

To make icing, combine cream cheese and butter until smooth. Add the sugar and mix until combined. Stir in vanilla. Mix again. Spread on cooked pumpkin bars.
