White Chocolate Peppermint Chippers

Ingredients

  • 3/4 C white chocolate chips
  • 2 C all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 C butter or margarine, softened
  • 2/3 C sugar
  • 1 large egg
  • 1 tsp vanilla
  • 12 round hard peppermint candies
  • 3/4 C chocolate chips

Preparation

Step 1

Preheat oven to 375 degrees

Melt 1/3 C white chocolate in microwave. Let cool slightly.

On waxed paper combine flour, baking powder and salt. Add butter to bowl with melted chocolate. Beat on medium speed until creamy. Add sugar and beat until fluffy. Add egg and vanilla and beat until well blended. Reduce speed to low and beat in flour mixture just until blended.

Crush candies in a zip lock bag with a hammer or rolling pin. Stir in chocolate chips, peppermint and remaining white chips.

Bake cookies 10-12 minutes or until edges are golden brown.
