Ingredients

  • 8 sheets phyllo dough
  • 1 large local grown tomato
  • 3 tablespoons shredded parmesan cheese (use more if you prefer)
  • 1/4 cup plain breadcrumbs
  • 3 tablespoons olive oil
  • pinch of salt for the tomatoes
  • fresh basil for garnish

Preparation

Step 1

1.Preheat oven to 400
2.In a small bowl combine the cheese and breadcrumbs
3.Unroll the phyllo dough
4.Place one sheet of dough onto a baking sheet and lightly brush with olive oil.
5.With your fingers sprinkle some of the breadcrumb cheese mixture onto the sheet of dough. Repeat with the remaining 7 sheets of dough.
6.Fold the edges over so you have a 1/2 inch rim around the tart. Brush the folded edges with more olive oil.
7.Sprinkle the top sheet with the remaining breadcrumb cheese mixture.
8.Dollop some pesto onto the top. You may have to spread it around with your fingers. It doesn't need to cover the entire tart. Just sprinkled around the tart a little.
9.Arrange the tomatoes on top.
10.Sprinkle the tomatoes with sea salt.
11.Bake for 12 - 15 minutes until the phyllo is golden.
12.Remove from oven and garnish with fresh basil.
13.Slice and Enjoy!
