Ingredients
- Cake Ingredients:
- 1 (18 1/2 Oz) Package Yellow Cake Mix
- 1 (3 1/2 Oz) Package of Instant Lemon Pudding Mix
- 4 Eggs
- 3/4 C Oil
- Glaze Ingredients:
- 4 C Powdered Sugar
- 1/4 C Fresh Lemon Juice
- Zest of 1 Lemon
- 3 T Oil
- 3 T Water
Preparation
Step 1
Preheat oven to 350 degrees.
Coat mini-muffin pans with Pam. Combine and blend cake ingredients with an electric mixer for 2 minutes. Spoon 1 Tablespoon into each muffin cup. Bake for 12 minutes. Turn on a tea towel.
Sift powdered sugar into a bowl. Add other ingredients and mix until smooth. Dip cupcakes in glaze while warm. Cover as much of the cake as possible. Place cakes on a wire rack with wax papers underneath to catch drips. Let glaze set thoroughly before storing in a sealed container.
