Italian Style Meat Loaf

Ingredients

  • 2 lbs lean ground turkey
  • 1 c fine Italian style bread crumbs
  • 1/2 c ketchup
  • 1 c grated mozzarella
  • 1 c finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 c chopped fresh parsley
  • 2 t dried basil
  • 1/2 t dried thyme
  • 1 t salt
  • 1/2 t pepper
  • 2 eggs, lightly beaten
  • 2 c pasta sauce

Preparation

Step 1

Heat oven to 350. Oil a large jelly roll pan or a roasting pan and set aside.

Combine all ingredients except pasta sauce in a large mixing bowl. Using your hands, toss ingredients lightly to evenly distribute them, then knead mixture well.

Transfer mixture to your baking pan, shaping it into a loaf about 12 in long and 5 in wide. Bake 40 mins, then remove from oven and spread cup of pasta sauce over top. Keep baking meat loaf until cooked through, about 35 more mins. Allow loaf to sit in pan for 15 mins before slicing. Serve with more pasta sauce, if desired.
