Ingredients
- One 1-lb. package potato gnocchi
- 4 Tbs. butter
- 1 onion, finely chopped
- 1 red bell pepper, chopped
- 12 ounces skinless, boneless chicken breast, cut into thin strips
- Salt and Pepper
- 2 Tbs. flour
- 1 cup half-and-half
- 1 cup chicken broth
- 2 scallions, chopped
Preparation
Step 1
1. Cook gnocchi according to package directions, drain.
2. Meanwhile, in a large skillet, heat 2 Tbs. butter over med-high heat. Add the onion and bell pepper and cook, stirring often, until softened, about 5 mins. Add chicken and cook, stirring occasionally, until just cooked through, about 5 mins.; season with salt/pepper.
3. In small saucepan, melt the remaining 2 Tbs. butter over medium heat. Whisk in flour and cook until toasted, about 3 minutes. Whisk in half-and-half and chicken broth; bring to boil. Lower heat and simmer until thickened. Whisk into the chicken mixture, then stir in the gnocchi. Briing to simmer, then season with salt and pepper and top with the scallions.
