Oriental Mushroom And Cucumber Salad
- 3 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 teaspoons minced fresh ginger
- 1/2 teaspoon minced garlic
- 2 cups thinly-sliced peeled cucumbers
- 4 ounces fresh white mushrooms sliced
- 1 package fresh enoki mushrooms - (3 1/2 oz)
- 1 cup diagonally-halved snow peas
- 1 cup thinly-sliced radishes
In a medium bowl whisk together vinegar, soy sauce, oil, ginger and garlic. Stir in cucumbers, white and enoki mushrooms, snow peas and radishes. Serve, if desired on lettuce-lined serving plates.
This recipe yields 4 servings.
