  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups canned tomatoes
  • 1 small green pepper
  • 1 small onion
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 1/2 bay leaf
  • 2 cloves
  • bread crumbs or croutons
  • butter or grated cheese

Preparation

Step 1

Wash zucchini, slice and cook in boiling salted water until tender - about 15 minutes. Put in casserole to wait for sauce.

SAUCE: Melt butter, stir in flour until blended. Add cut up pepper and onion, and cook for five minutes. Then add canned tomatoes and cook five minutes more.

Pour sauce over zucchini, top with crumbs or croutons and butter or cheese. Bake in 350 oven for 30 minutes.
