Cream Cheese-Apple Crisp

“I like to bake and enjoy experimenting by combining ingredients and recipes from different sources,” says member Sharon Rosen. To create this apple-rich dessert, Sharon enhanced a basic crisp recipe by giving it a crust to make it easier to eat. She then added a layer of cream cheese to provide more body. When choosing apples, select those that hold their shape well, such as Golden Delicious or Jonagold.

Ingredients

  • TOPPING
  • 1 1/2 cups quick-cooking oatmeal
  • 1 1/3 cups all-purpose flour
  • 1 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 3/4 cup butter, chilled, cut up
  • APPLES
  • 6 cups peeled chopped apples (1/2 inch) (4 large apples)
  • 1/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • FILLING
  • 1 (8-oz.) pkg. cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 2 tablespoons milk

Preparation

Step 1

Heat oven to 350°F. In large bowl, stir together oatmeal, 1 1/3 cups flour, brown sugar and 2 teaspoons cinnamon. Cut in butter until mixture is crumbly. Press half the mixture into bottom of 13x9-inch glass baking dish; reserve remaining mixture for topping.

In large bowl, toss together all apple ingredients until apples are coated. Spread over crust.

In large bowl, beat cream cheese and 1/2 cup sugar at medium speed until smooth. Add eggs, 2 tablespoons flour and milk; beat until combined. Spread over apple mixture; sprinkle with reserved oatmeal mixture.

Bake 40 to 45 minutes or until golden brown and apples are tender. Cool on wire rack.
