Ingredients
- Juice of 2 ripe limes
- 1 teaspoon coconut or raw turbinado sugar (or sugar alternative of your choice, or none at all)
- 16 ounces fresh spring water
- 1 tablespoon whole chia seeds
- several sprigs fresh mint and 1 lime wedged for garnish
- Makes 1 serving
Preparation
Step 1
Dissolve sugar into lime juice and water. Add chia seeds and stir well every few minutes. Let soak in total about 20 minutes until chia seeds swell. Keep stirring to avoid clumps. Serve chilled or over ice and garnish with lime and mint.
