Asparagus and Kelp Noodle Soup

Ingredients

  • 6-8 asparagus spears
  • 1/4 cup raw cashews (I soaked my for half hour)
  • Juice of half a lemon
  • Sea salt to taste (optional)

Preparation

Step 1

Break the tough ends off or 6-8 asparagus spears. Cut off the tender
tips and soak them in a bowl with water and lemon juice. Throw the kelp
noodles in also. Soak for 30 mins.

In your vitamix combine:
The remaining asparagus spears
1/4 cup raw cashews (I soaked my for half hour)
Juice of half a lemon
Sea salt to taste (optional)
Just enough water to cover

Blend it up and keep it going for a while if you want it hot. Pour into
a mug and throw in the drained asparagus tips and kelp noodles.
