Ingredients
- Black beans (1/2 bag for 4 to 6 people)
- Stock –
- 2 cans beef soup
- 1 can chicken soup
- 1 cup chopped onion
- 3 bay leaves
- Spices –
- 1 t. Creole seasoning (look for one with celery salt, chili, cayenne, paprika etc..)
- 1 t. oregano (heaping)
- 3/4 t. chili powder
- Dash Cayenne
- Garnish –
- 1/2 cup cilantro
- Sour cream
- Red onion
Preparation
Step 1
Soak beans 6 to 8 hours, rinse lightly and throw in the coup pot with the stock, bring to simmer for about 15 minutes and begin spicing.
Simmer for 1 to 2 hours or until the beans begin to fall apart. Strain out some of the beans and let cool along with some of the soup base. Purée until smooth and add back to soup base.
Add - and simmer for 20 to 45 minutes
¼ cup red wine
1 cup chopped tomato
½ cup rice
Add ½ cup cilantro just before serving. Garnish with additional cilantro, sour cream and some red onion if you like
