Asparagus - Herbed with Parmesan Cheese

Ingredients

  • 2 lbs thin asparagus, cut into 2 in sections
  • 4 T butter
  • 1 T fresh Italian parsley, chopped
  • 1 T fresh chives, chopped
  • 1 T fresh dill, chopped
  • 1 T fresh rosemary, chopped
  • 1 t fresh ground pepper
  • 4 oz Parmesan cheese

Preparation

Step 1

Bring lg pot of water to boil & add asparagus. Simmer until just tender 1 1/2 - 2 min. (Or steam asparagus). Drain well. Combine butter, chopped herbs & pepper over med heat in skillet. Add asparagus & toss gently to heat through. Pour asparagus onto warm platter & shave or grate Parmesan over it. Serve immediately. Refrigerate leftovers.
