Ingredients

  • 1/3

    cup raspberry jam

  • 2

    eggs

  • 1/2

    cup packed brown sugar

  • 1

    tsp vanilla

  • 2

    TBSP flour

  • 1/8

    tsp salt

  • 1/8

    tsp baking soda

  • 1

    cup chopped walnuts

  • Shortbread Base:

  • 1 1/4

    cups all purpose flour

  • 1/2

    cup granulated sugar

  • 1/2

    cup butter

  • (Combine flour and sugar. Cut in butter until mix is like fine meal.

Directions

Prepare shortbread. Press into a lightly greased 9 inch square pan to make an even layer. Bake at 350 for 20 minutes or just until edges become lightly brown. Remove from oven and spread the raspberry jam over the shortbread. Beat eggs, brown sugar, and vanilla until well blended. Stir in flour mixed with salt and baking soda. Add walnuts, spoon over jam and spread lightly to corners of pan. Return to oven and bake 20-25 minutes longer or until top is set. Cool in pan, then cut into bars. Makes 24 bars.
