Dill-Cooked Crayfish

This is the simplest and best method for cooking fresh crayfish. It works well with shrimp and rock shrimp, too.

Ingredients

  • 2 pounds uncooked crayfish (live or frozen and defrosted)
  • 3 quarts water
  • 1/3 cup salt
  • 1/3 cup sugar
  • large bunch fresh dill, preferably with crowns
  • melted butter
  • lemon wedges, for garnish

Preparation

Step 1

If using live crayfish, check to be sure they are all alive and discard any crayfish no longer alive. Rinse the crayfish in cold water. In a very large pot, combine the water, salt, sugar and dill, reserving enough dill for the garnish. Bring to a boil.

Drop in the crayfish and return to a boil. Boil for 12 minutes. Drain the crayfish and allow them to cool. Refrigerate until ready to serve or mound on a tray and serve immediately garnished with fresh dill. Serve with melted butter and lemon wedges.
