Smoked Salmon Pasta

The. Traditional method of preparing this dish is with whipping cream, making sauce very rich! I substitute either 2% evaporated milk or a mixture of about 1 1/2 cups non fat sour cream and a ultra low fat cream cheese .
Ingredients
- 1/4 cup extra vergin olive oil
- 1 tbsp finely chopped onion
- 2 crushed garlic cloves
- 1 cup smoke salmon julienned
- Salt and pepper to taste
- 2 tbsp black caviar
- 3 Roma tomatoes diced and desseded
- 3 tbsp vodka
- 2 cups evaporated 2% milk ( or Whipping Cream)
- 1 cup paramasan cheese
- 1 1/2 lb fettuccine
- Chopped fresh parsley for garnish

Step 1
Add olive oil to saucepan over medium heat. add chopped onion and garlic. Cook until golden brown. Now add chopped Roma tomatoes and Smoked salmon to pan. Add salt and pepper to taste. Increase the heat to high and stirring constantly cook for about 2 to 3 minutes until tomatoes are softened. Reduce heat and add vodka. Simmer until liquid is reduced by half.
Cook fettuccine boiling salted water until a la dente. Drain, add sauce, sprinke with caviar and parmesan cheese and toss to coat evenly. Divide pasta among 6 plates. Garnish each plate with parsley and serve.
