Ingredients
- Mix together:
- 8 lb pork roast
- 1 C sugar
- !C coarse salt
- Mix the salt and sugar and rub over the meat. Refrigerate overnight. Rinse and pat dry
- Preheat oven to 300*
- Roast meat 6hrs Remove and turn oven up to 500*
- 1 T salt
- 7 T Brown sugar
- Rub all over meat. Return to oven and cook until it’s crisp.

Sauces:
Ginger Scallion Sauce
½ C chopped scallions
Pinch of salt
1 tsp soy sauce
Few shakes vinegar
Fresh ground black pepper
¼ c neutral oil
Thumb size piece of ginger—minced
Mix together
Jalapeno Garlic Sauce
2 jalapenos roughly chopped
2 cloves garlic roughly chopped
Salt and pepper
Dash of soy sauce
Dash of vinegar
Put all in blender and slowly add neutral oil
