Ingredients

  • Mix together:
  • 8 lb pork roast
  • 1 C sugar
  • !C coarse salt
  • Mix the salt and sugar and rub over the meat. Refrigerate overnight. Rinse and pat dry
  • Preheat oven to 300*
  • Roast meat 6hrs Remove and turn oven up to 500*
  • 1 T salt
  • 7 T Brown sugar
  • Rub all over meat. Return to oven and cook until it’s crisp.

Sauces:

Ginger Scallion Sauce

½ C chopped scallions
Pinch of salt
1 tsp soy sauce
Few shakes vinegar
Fresh ground black pepper
¼ c neutral oil
Thumb size piece of ginger—minced

Mix together

Jalapeno Garlic Sauce

2 jalapenos roughly chopped
2 cloves garlic roughly chopped
Salt and pepper
Dash of soy sauce
Dash of vinegar

Put all in blender and slowly add neutral oil
