Roasted New Potatoes with Rosemary

Ingredients

  • 2 lbs. small red potatoes, quartered
  • 3 Tb. olive oil
  • 2 tsp. chopped fresh rosemary, (or 1/2 tsp. dried)
  • 1 tsp. minced garlic
  • 3/4 tsp. salt
  • 1/2 tsp. pepper

Preparation

Step 1

1. Preheat oven to 450 degrees. Toss together first 6 ingredients in a large bowl. Spoon into a lightly greased aluminum foil-lined 15x10" jelly-roll pan.

2. Bake at 450 degrees for 25-30 minutes or until potatoes are tender.
