Spicy Tomato and Bean Soup

Ingredients

  • 1 (15 oz) can spicy chili beans, undrained
  • 1 (11.5 oz) can vegetable juice
  • 1 large tomato, seeded, coarsely chopped
  • 1 c. frozen corn
  • 1/3 c. sliced green onions
  • 1 T. chopped fresh cilantro
  • 1/4 to 1/2 t. chili powder
  • 2 T. light sour cream

Preparation

Step 1

In large saucepan, combine all ingredients except sour cream; mix well. Bring to a boil. Reduce heat; simmer 10 minutes. Ladel soup into serving bowls; top with sour cream.
