Orange Spiced Sweet Potatoes

Ingredients

• 2 lb sweet potatoes, peeled & diced
• 1/2 cup dark brown sugar
• 1/2 cup butter, cut into small pieces
• 1 tsp ground cinnamn
• 1/2 tsp ground nutmeg
• 1/2 tsp grated orange peel
• 1 juice of orange
• 1/4 tsp salt
• 1 tsp vanilla
• toasted pecans, chopped

Preparation

Step 1

In a baking dish; mix sweet potatoes, brown sugar, butter, cinnamon, nutmeg, orange peel, orange juice, salt and vanilla. Cover, cook in preheated 350 F (180 C) oven for 1 to 1 1/2 hours or until potatoes are tender. Sprinkle with pecans before serving.
