Zucchini Rolls with Proscutto in tomato sauce

Ingredients

  • 3 tbsp olive oil
  • 2 cloves garlic
  • 1/4 c finely chopped onion
  • 1 lg can (29 oz) contadina sauce chipped crushed or whole tomatoes
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • 3 med sized zucchini
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 2 tsp lemon juice
  • 1/4 lb very thinly sliced proscutto

Preparation

Step 1

1. to make tomato sauce, in a large skillet, heat 2 tbsp olive oil over med low heat. add whole garlic cloves and cook turning occassionally until cloves are golden and soft not burned. remove garlic, set aside.

2. add onion to skillet and saute until golden. add tomatos salt and sugar partially cover and cook stirring occassionally until tomaoes soften and mixture becomes a chunky sause.

3. meanwhite trim ends and cut outer skin off zucchini. slice lengthwise 1/8" slices.

4. in a large shallow microwave safe dish place zucchini which have been sprinkled with pepper and garlic powder. cover with wax paper and microwave until zucchini is soft to roll.

5. drain zucchini put on paper towels to dry.

6. top with proscutto (slice in half if it is to wide) and roll up to enclose zucchini.

7. to serve, spread tomato sauce in a baking dish, arrange rolls in sauce. serve warm.
