Buttered Herbed Vegetables
- 4 medium carrots, peeled and cut diagonally in 1/2 inch pieces
- 2 large zucchini, diagonally cut into 1/2 inch pieces
- 2 Tbs butter
- 2 Tbs chopped parsley, basil, or cilantro
Bring 4 cups water to boil in 2 qt saucepan. Add carrots, allow water to return to boil, and cook for 3 minutes. Add zucchini, allow water to retrun to boil and cook 4 minutes. Drain vegetables and place in serving dish.
Combine butter and herbs of choice in small microwave safe dish. Cover, and microwave for 30 seconds. Pour herb butter over steaming vegetables. Serve immediately.
