Ingredients
- 3-4 pound roast
- 2 parts water*
- 1 part white vinegar*
- 1 onion chopped
- 2-3 Tbsp ketchup
- 1 tbsp ground cloves
- 1-2 bay leaves
- 2-3 cloves garlic
- salt & pepper
- flour (to make gravy)
- ie: 2 cups water to 1 cup vinegar - increase both within this same ratio if you want more gravy, and add a bit more ketchup / garlic.
Preparation
Step 1
salt and pepper meat liberally, coat with flour and sear in large pot or dutch oven in a bit of olive oil
add water and vinegar
add other ingredients (except flour)
Bring to boil, reduce temp to low and simmer for about 3 hrs
Take meat out, add flour and bring to a boil till gravy is desired consistency. (To avoid lumps you can substitute flour with 2 - 3 T of cornstarch mixed with 1/4 C cold water to make a slurry)
