Summer Rice Salad

Ingredients
- 2 c hot cooked rice
- 1/4 c OO
- 1/4 c wine or rice vinegar
- 1 t salt
- 1 t grd blk pepper
- 1 t dried tarragon
- 1/2 c finely chopped green bell pepper
- 1/2 c chopped pimento
- 1/2 c chopped fresh parsley or cilantro
- 1/2 c chopped onion or green onion
- 1 c chopped ripe tomato (seeds removed)
- 1 c chopped cucumber
- 1 hard-cooked eggs, sliced & sliced olives for garnish, optional
Details
Preparation
Step 1
While rice is hot, mix with OO, vinegar, salt, blk pepper & tarragon
Cool
Add green bell pepper, pimento, parsley or cilantro, onion, tomato & cucumber
Mix gently but well
Place in a large serving bowl & garnish with eggs & olives, if desired
Serve immediately or cover & refrigerate until serving time
