Ingredients

  • 2 c hot cooked rice
  • 1/4 c OO
  • 1/4 c wine or rice vinegar
  • 1 t salt
  • 1 t grd blk pepper
  • 1 t dried tarragon
  • 1/2 c finely chopped green bell pepper
  • 1/2 c chopped pimento
  • 1/2 c chopped fresh parsley or cilantro
  • 1/2 c chopped onion or green onion
  • 1 c chopped ripe tomato (seeds removed)
  • 1 c chopped cucumber
  • 1 hard-cooked eggs, sliced & sliced olives for garnish, optional

Preparation

Step 1

While rice is hot, mix with OO, vinegar, salt, blk pepper & tarragon
Cool
Add green bell pepper, pimento, parsley or cilantro, onion, tomato & cucumber
Mix gently but well
Place in a large serving bowl & garnish with eggs & olives, if desired
Serve immediately or cover & refrigerate until serving time
