Ingredients
- 4 sandwich-size sourdough English mufffins
- 2 large cans (9oz each) tuna in water, well drained
- 5 rounded Tbsp sweet pickle relish
- 1/2 medium white onion, finely chopped
- 2 ribs celery with leaves, finely chopped
- 2 tsp Old Bay seasoning
- 1/2 cu mayonnaise or ranch dressing
- 4 radishes, finely chopped
- salt and pepper to taste
- 2 tomatoes, sliced
- 3/4 - 1 lb sharp white cheddar cheese, sliced

Step 1
1. Preheat broiler. Place English muffins on a cookie sheet; lightly toasta, then remove from oven. Leave the broiler on.
2. Mix tuna with relish, onion, celery, Old Bay, mayo, and radishes, using 2 forks to combine and mash the salad. Season with salt and pepper. Use a large scoop to mound salad evenly on top of the 8 muffin halves. Top each mound with tomato and cheese slices and place the open-faced sandwiches under the boiler to melt the cheese. Serve immediately with chips of choice or green salad on the side.
