Ingredients
- 1 cup (2 sticks) butter, softened
- 1 cup sugar
- 1 egg
- 4 teaspoons almond extract
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/3 cup blanched almonds
Preparation
Step 1
Preheat oven to 350 degrees. Coat two large baking sheets with cooking spray.
In medium bowl, with electric beater on medium speed, cream butter and sugar. Add egg and almond extract; mix well. Add flour, baking soda, and salt; beat until well combined and the dough is stiff.
Roll into 1-inch balls and place on prepared baking sheets. Flatten slightly and push almond lightly into top of each cookie.
Bake 8 to 10 minutes, or until light golden. Remove to wire rack to cool completely.
Notes:
You can add a little more or less almond extract, depending on how "almondy" you want the cookies to be
