Bacon Egg and Cheese Muffin

  • 1 slice Canadian bacon or thin slice deli ham
  • 1 EGG, beaten
  • Shredded Cheddar cheese
  • 1 muffin, split, toasted



Step 1

1. Line the bottom a 8oz. ramekin or custard cup with Canadian bacon, if using ham it may be necessary to fold the slice in half. Pour egg over Canadian bacon.

2.Microwave on high for 30 seconds then stir. Place back in microwave until egg is almost set, 15 to 30 seconds longer. Season with salt and pepper for taste

3. Top the egg with cheese. Serve on muffin of choice.
