  • 1 1/2 cups all-purpose flour
  • 3 cups quick-cooking oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 8 tablespoons (1/2 cup) unsalted butter, softened
  • 3 tablespoons light-colored corn syrup
  • 1 1/2 teaspoons vanilla extract
  • 2 large egg whites
  • 1 large egg
  • 1 1/3 cups raisins

Heat oven to 350 degrees F. Line two baking sheets with parchment paper; set aside.
In a medium bowl, whisk together flour, oats, baking soda, cinnamon, nutmeg, cloves, ginger, salt; set aside.
In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and the sugars at medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula as needed. Add the corn syrup, vanilla, egg, and egg whites and beat at medium speed until combined, about 30 seconds. Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed. Fold in raisins.
Drop by rounded tablespoons onto prepared baking sheets and bake for 10 minutes or until lightly browned. Cool the cookies on the baking sheets about 2 minutes; using a wide metal spatula, transfer the cookies to a wire rack and cool
