Ingredients

  • 1 lg cucumber, sliced 1/4" thick (2 c)
  • 1 med. onion, sliced thin (3/4 c)
  • 1 c sugar
  • 1/2 c white vinegar
  • 1 t salt
  • 1/2 t mustard seeds
  • 1/4 t celery seeds
  • 1/4 t turmeric

Preparation

Step 1

Mix all ingredients in 2 quart microwave safe bowl. Microwave on high for 7-8 mins, stirring twice until cucumber is crisp tender and onion is transparent. Ladle into glass jar rinsed with boiling water. Cover, cool slightly and refrigerate.
