Gumbo - Chicken With Homemade Broth (KY Monthly Magazine)

Can use prepared chicken broth if place of homemade stock
Ingredients
- Stock recipe
- GUMBO
- 1 1 1 c flour
- 1 1 1 c oil
- 4 4 4 garlic cloves
- 2 2 2 c chopped onions
- 1 1/2 1 1/2 1/2 c chopped celery
- 1 1/2 1 1/2 1/2 c chopped bell pepper
- 1 1 1 T thyme
- 1 1 1 T sweet basil
- 1 1 1 T oregano
- 1 1 1 T Worcestershire sauce
- 1/2 1/2 1/2 t red pepper flakes
- 5 5 5 dashes Tabasco or hot sauce
- 1 1 1 t Kitchen Bouquet
- Dash Dash or liquid smoke
- to & pepper to taste
- 2 2 2 lbs okra, quartered
- 3 3 3 T bacon grease
- 1 1 1 lb raw peeled shrimp
- 1 1 1 pt oysters & liquid
- 1/4 1/4 1/4 c chopped parsley
- 2 2 2 c cooked rice

Step 1
In lg Dutch oven, make dark brown roux with flour & oil. To make roux heat oil to smoking & add flour. Stir continually until flour turns nutty brown, being careful not to burn. Once roux is brown, add garlic, onions, celery & green pepper. Sauté all together uncovered until wilted (10 min), stirring often. Add all remaining seasonings & set aside.
Heat the stock with meat & add to roux mixture. In separate pan, sauté okra in bacon grease until ro pines is gone. Add to stock. Cook at med high for 1 hr. Before serving, add shrimp, oysters with liquid & parsley. Cook 10 min. Taste & correct seasonings. Cook enough rice to cover the bottom of each bowl. Gumbo aficionados add gumbo file powder.
