Ingredients

  • 2 c water
  • 1 lg potato, peeled & cubed
  • 1/4 c minced onion
  • 1/2 t salt
  • 1/4 t fresh ground pepper
  • 2 c minced clams with juices
  • 1 c heavy cream
  • 2 T butter

Preparation

Step 1

Combine first 5 ingredients in lg pan over med high heat; bring to boil. Cover & simmer 10 min or until potato is tender.

Add clams & return to boil, stirring occasionally. Remove from heat & let stand 20 min. Stir in cream & butter. Cook over low heat, stirring constantly until thoroughly heated.
