Nutburger - Healthy from Essential Edibles

I used to have lunch in a great restaurant in the basement of a church in Indianapolis. The chef gave me this recipe. Thanks Becky!

Ingredients

  • 2 cups cooked brown rice
  • 1 cup cashews
  • 1/2 cup almonds
  • 1 cup peanuts
  • 1 tablespoon tahini
  • 1 small onion, chopped
  • 3/4 cup cold water
  • 1 tablespoon chili powder
  • 1 tablespoon arrow root
  • 2 1/2 tablespoons soy sauce

Preparation

Step 1

Set oven at 350 degrees and lightly toast all nuts for eight minutes, stirring every 3 minutes to avoid over-browning.
Ground the nuts until fine.
Mix ground nuts with chopped onion and tahini.
In a small saucepan, mix water, arrow root, chili powder and soy sauce until thickened.
Combine all ingredients and form into patties.
Broil and serve on a whole wheat bun.
