Southwest Pasta Salad

Ingredients

  • 1 LB dry pasta (rotini or farfalle)
  • 1 LB frozen corn, thawed
  • 1 can sliced black olives (3.8oz)
  • drained
  • 2 red bell peppers, diced
  • 1 1/2 C sliced scallions
  • 3 TBL chopped garlic
  • 2/3 C olive oil
  • 1/3 C fresh lime juice
  • 1-2 TBL white wine vinegar
  • 1 TBL fresh oregano or
  • 2 tsp dried oregano
  • 1 tsp each ground cumin & coriander
  • 1/4 tsp cayenne pepper
  • kosher salt & black pepper to taste
  • 2 avocados, peeled, pitted & diced

Preparation

Step 1


PREPARE pasta according to pkg. directions
drain & toss w/ corn, olives, bell peppers, scallions & garlic in lg. bowl

WHISK togth. oil, lime juice, vinegar, oregano, cumin, coriander &
cayenne in bowl.

pour over pasta-vegie mix. & toss to coat

season pasta salad w/ S & P
gently stir in avocados just before serving
