Hal's Easy Tsimmes

My mother never met a tsimmes (a sweet carrot casserole) she didn't like, but she really makes a "tsimmes" (a fuss) about this one, which requires minimal attention and is hardly a "gontzeh tsimmes" (a big fuss) to prepare at all using a slow cooker. She finds that by adding the prunes well into the cooking process, they are less likely to fall apart. She also likes to give the carrots a head start, since they take longer to cook than the sweet potatoes

Ingredients

  • 2 cups Boiling water
  • 3/4 cup (packed) dark brown sugar (or Truvia brown sugar substitute)
  • 4 tsp Beef bouillon powder
  • 1 1/2 lbs Carrots, cut into 1/2 in thick slices
  • 1 1/2 lbs Sweet potatoes, cut into 1 in cubes
  • 12 oz Pitted prunes

Preparation

Step 1

1, Pour the boiling water into a heat-proof measuring cup or bowl, and stir in the brown sugar and beef bouillon powder.
2. Place the carrots in a slow cooker, and add the hot liquid. Cook on high for 2 hours, stirring once each hour.
3. Reduce the heat to medium (or low, if your cooker does not have a medium setting.
4. Add the sweet potatoes, stir, and cook on medium (or low) for 3 hours.
5. Stir in the prunes and continue cooking until the sweet potatoes and carrots are tender and most of the liquid has been absorbed, 1 to 3 hours.
6. Serve hot.


Note:
Since slow cookers vary as to heat output, check the mixture occasionally. If it begins to stick, stir in boiling water, 1/4 cup at a time, to produce a thick texture.
