Ingredients

  • Icing:
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 t. vanilla extract
  • 1 egg
  • Juice and zest of one large lemon
  • 1/4 t. salt
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1 3/4 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup chopped pecans
  • 1 cup powdered sugar
  • 1/4 cup lemon juice

Preparation

Step 1

Preheat oven to 350 F. Grease a 9x9 baking pan.

In a large bowl, cream butter and sugar together until light and fluffy. Mix in vanilla, egg, lemon zest, and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined. Spread evenly into greased baking pan and press into bottom and along sides.

Bake for 30 minutes or until center is set and edges start to brown. Remove and cool.

Mix icing ingredients and drizzle on top of cooled bars.
