Sweet Onion and Spinach Burgers

Ingredients

  • 1 egg, beaten
  • 1/4 c rolled oats
  • 2 T water
  • 1/2 t salt
  • 1/4 t black pepper
  • 1 lb lean ground beef
  • 1 T butter
  • 1 c sweet onion, sliced
  • 2 t packed brown sugar
  • 1/2 t dry mustard
  • 2 c loosely packed fresh baby spinach leaves, coarsely chopped
  • 6 T light semisoft cheese with garlic and herbs
  • 3 whole wheat pita bread rounds, halved

Preparation

Step 1

Preheat broiler. In a med bowl stir together egg, oats, water, salt and pepper. Add ground beef; mix well. Shape mixture into six 1/2-in oval patties. Place patties on the unheated rack of a broiler pan. Broil 3-4 in from heat for 10-12 mins or until internal temp of each burger registers 160 on an instant-read meat thermometer, turning once halfway through broiling.
Meanwhile, in a med nonstick skillet melt butter over med-low heat. Add onion. Cook, covered, for 13-15 mins or until onion is tender. Add brown sugar and mustard. Cook and stir, uncovered for 3-4 mins or until onions are golden. Stir in spinach. Toss lightly to coat; heat through.
Spread 1 T cheese on 1 side of inside of each pita bread half. Fill each pita break half with a patty and some of the onion-spinach mixture.
