SHRIMP & ZUCCHINI STIR FRY

Ingredients
- 4 CUPS Frozen cooked brown rice
- 2 Tbsp Canola Oil
- 1 lb 26 to 30 count med shelled and deveined shrimp
- 2 Tbsp Maple syrup
- 1 lb Zucchini, thinly sliced and halved
- 2 tsp Lower sodium soy sauce
- 1 bunch bunch green onions trimmed & thinly sliced
- 1 tsp Ground ginger

Preparation
Step 1
1. In skillet, heat 1 tblsp oil on medium high until hot.
2. Add shrimp to skillet; sprinkle with 1/8 tsp freshly ground black
pepper
3. Cook 2 minutes or until almost opaque throughout, stirring occassionaly
4. Add 1 tblsp maple syrup.
5. Cook 1 minute or until shrimp IS opaque throughout.
6. With slotted spoon, transfer to medium bowl
7. To same skillet, add zucchini; cook 2 minutes, stirring occasionaly
8. Add remaining 1 tblsp maple syrup & 1/2 tsp soy sauce.
9. Add 2 tblsp water if pan is dry.
10. Cook 4 to 6 minutes or until zucchini is tender, stirring & scraping
up any browned bits
11. Transfer zucchini and any juices to bowl w/shrimp
12. To same skillet, add green onions, ginger, & remaining tblsp oil
13. Reduce heat to medium. Cook 1 minute, stirring.
14. Add rice, remaining 1 1/2 tsp soy sauce, and 1/8 tsp salt.
15. Cook 3 minutes or until rice is hot, stirring constantly
Serve rice with shrimp.
