- 3/4 pound cooked , peeled, and cleaned shrimp fresh
- or frozen or 3 (4 1/2 or 5 oz.)cans shrimp
- 2 cups cooked rice
- 1/2 cup chopped parsley
- 1/2 cup mayonnaise
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon curry powder
- 1 cup sliced celery
- 1/4 cup sliced ripe olives
- 2 tablespoons french dressing
- salad greens
Preparation
Step 1
Thaw shrimp if frozen or drain canned shrimp. Cover canned shrimp with ice water and let stand 5 minutes, drain. Cut large shrimp in half. Combine rice, celery, parsley, olives and shrimp. Combine mayonaisse, french dressing, lemon juice and curry powder. MIx thoroughly, add mayonnaise mixture to shrimp mixture; toss lightly. Chill. Serve on salad greens.
Suggestions: Tarragon is an interesting addition, also chives. Add a few drops of Tabasco to dressing mixture. Water chestnuts or slivered toasted almonds add crunchiness
