Sweet Potatoes - Mashed Maple

Ingredients

  • 6 sweet potatoes (pricked with fork)
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons unsalted butter, cut into pieces and softened
  • 1/4 cup toasted pecan halves, coarsely chopped

Step 1

Preheat oven to 400 degrees. Cut 6 squares of foil, each large enough to wrap 1 potato. Place each potato in foil, drizzle with oil and wrap lightly.

Bake on a sheet pan in middle of oven, turning once until very tender (1 hour or longer). Transfer pan to rack to cool slightly. Carefully unwrap potatoes, halve and scoop out flesh in a bowl. Discard skin. Mash with maple syrup and vinegar until smooth. Salt and pepper to taste.

Transfer into a serving bowl; top with butter pieces and pecans. Makes 8 servings.
