  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 egg, lightly beaten
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon maple flavoring
  • 1 cup shredded zucchini
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup chopped walnuts

Step 1

In a bowl, combine flours, baking soda, salt, and baking powder. Combine the egg, sugars, oil, and flavorings; mix well. Stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips, and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-25 minutes or until muffins test done.
