Maple Walnut Chicken

Ingredients

  • 4 boneless, skinless chicken-breast halves (about 5 ounces each)
  • 1 large egg
  • 1 teaspoon water
  • 1 1/3 cups finely chopped walnuts
  • 1 cup finely crushed butter-flavored crackers
  • 4 tablespoons butter, melted
  • 1/2 cup pure maple syrup, divided

Preparation

Step 1

1Preheat the oven to 450F. Spray a 12x9-inch baking dish with nonstick cooking spray.
.2Pound the chicken to 1/4-inch thickness.
.3Combine egg and water in a shallow bowl and mix well.
.4Combine walnuts and cracker crumbs in a medium bowl and mix well. Coat chicken with egg mixture, then with walnut mixture. Arrange in prepared baking dish.
.5Drizzle chicken with the butter and half the syrup, reserving the remaining syrup.
.6Bake until golden and an instant-read thermometer inserted in center of the meat registers 180F, 20 to 25 minutes. Drizzle with reserved syrup. Serve chicken immediately.
