Shortbread Brownies

Ingredients

  • 1 c all-purpose flour
  • 1/4 c packed brown sugar
  • 1/2 c butter
  • 1/4 c mini semisweet chocolate chips
  • 1 1/2 c granulated sugar
  • 3/4 c all-purpose flour
  • 1/2 c unsweetened cocoa powder
  • 1 1/2 t baking powder
  • 1/2 t salt
  • 3 eggs
  • 1/3 c butter, melted
  • 1 T vanilla
  • 1/2 c mini semisweet chocolate chips

Preparation

Step 1

Preheat oven to 350. Line a 9x9x2-in baking pan with foil, leaving about 1 in of the foil extended over the edges of the pan. Grease foil; set pan aside.
In a med bowl stir together the 1 c flour and brown sugar. Using a pastry blender cut in the 1/2 c butter until mixture resembles coarse crumbs. Stir in the 1/4 c chocolate chips. Press into prepared pan. Bake 8 mins.
Meanwhile, in large bowl stir together granulated sugar, 3/4 c flour, cocoa powder, baking powder and salt. Add eggs, melted butter and vanilla. Using a wooden spoon beat until smooth. Stir in 1/2 c chocolate chips. Carefully spread over baked crust in pan.
Bake 40 mins more. Transfer pan to wire rack; cool completely. Use foil to life brownies out from pan. Place on cutting board; cut into brownies.
